Preheat the oven to 200C / Gas mark 6. Place a 140g cod steak in a piece of foil. Add 1 crushed garlic clove, a squeeze of fresh lemon juice and 1 tbsp of chopped tarragon. Season with black pepper, wrap up the foil, place in a roasting tin and roast in the oven for around 25 minutes. While the fish is cooking, boil 6 new potatoes in their skins and 3 tbsp of peas. Serve the fish with the new potatoes, tossed with 1 tsp of low-fat spread and the peas. Follow with a fruit salad made from 1 chopped nectarine, 1 chopped kiwi and fresh raspberries, topped with a 120g pot Activia Intensely Creamy Juicy Raspberry Yogurt.
