Top 1 tortilla wrap with 4 tbsp of grated reduced-fat cheese and 4 roasted red pepper pieces from a jar (make sure you drain the peppers!). Season with black pepper, then top with a second tortilla wrap and press down lightly. Meanwhile, brush a non-stick frying pan or griddle pan with sunflower oil. Add the tortilla to the pan and fry gently for a few minutes. Flip over and fry the other side. Gently lift it from the pan, cut it into 4 pieces and serve with salad and 2 tbsp of guacamole, 2 tbsp of salsa and 2 tbsp of low-fat sour cream. Round it off with an apple for dessert.

Perfect meal! It was quick and easy to make and nice and filling. I added a small amount of pesto to add a little more flavour. :)
