  • Small bunch of 20 grapes

Cheese and tomato stuffed chicken breast with new potatoes

Preheat the oven to 200C / Gas mark 6. Slice a 125g skinless chicken breast horizontally to make a pocket (don?t cut all the way through). Spread the inside with 1 tbsp low-fat soft cheese and 2 chopped sun-dried tomatoes. Wrap the chicken breast with 2 slices of pancetta then bake until cooked through ? around 25-30 minutes. While the chicken is cooking, boil 6 new potatoes in their skins, then drain. Serve the chicken with the potatoes topped with 1 tsp low-fat spread and steamed broccoli. Follow with 1 nectarine and a small bunch of 20 grapes.

This is a great meal - never fails to work and can look really professional. Add some fresh basil for a bit of colour. Also try wrapping the chicken in foil and replacing the potatoes with linguine. I often have a green salad instead of the brocolli in summer.
