Peel and mash ½ ripe avocado with a little lemon juice and black pepper. Spread the avocado over 1 slice of wholegrain bread and top with 1 sliced tomato and another slice of bread. Top this slice of bread with 2tsp light mayo, 2 slices skinless roast chicken breast and 1 sliced tomato and finish with a third slice of bread. Cut into quarters and serve with 1 apple.

With the mashed avocado I made a guacamole so didn't need the mayo, and served it on a granary roll, with rocket, tomato and Onion. It was delicious. With meals like this it will be really easy to stick to

NIce, but I'm allergic to tomatoes, I just added mixed green leaves mixed with a little of the mayo instead

Not a fan of avocado, enjoyed rest with only 2 slices of bread could not manage any more.
