Prepare 50g couscous according to the pack instructions. Chop a 100g pre-prepared grilled skinless chicken breast into bite sized pieces, slice 2 sun-dried tomatoes and halve 7 cherry tomatoes. Finely chop a small bunch of coriander. Mix the couscous with the chicken, sun-dried and cherry tomatoes, coriander, 2tbsp chick peas, 1tbsp olive oil, lemon juice and black pepper. Plus 1 apple.

Very tasty, I used sweetcorn and diced cucumber, as I did not have any chick peas and sun dried tomatoes. I will definitely have this again.

I am always looking for salads to eat in the colder months as my salad eating seems to go out the window past summer. This is proving a great one as the couscous and chicken add a bit of warmth.
