  • 2tsp olive oil
  • 2 garlic cloves

  • 200g button mushrooms
  • 100ml each vegetable stock
  • 100ml dry white wine.
  • 3tbsp reduced-fat crème fraiche
  • salad
  • fat-free dressing

Creamy garlic mushroom pasta

Creamy garlic mushroom spaghetti

Cook 100g of spaghetti according to the instructions on the packet, drain and set aside. While the spaghetti is cooking, heat 2 tsp of olive oil in a non-stick frying pan. Crush 2 garlic cloves and chop 1 small onion. Fry the garlic and onion for 3-4 minutes until soft, then add 200g of button mushrooms and cook until brown. Add 100ml each of vegetable stock and dry white wine. Simmer until the sauce thickens. Then spoon in 3 tbsp of reduced-fat crème fraiche and the drained spaghetti. Heat through without boiling and serve with a salad dressed with fat-free dressing.

I had this for dinner, but I was disappointed. There was far too much liquid in it for me. I found it quite sloppy, although I did eat it. I would not make this again

Yes, but be aware of the stock taste as can be quite salty. What the white wine adds is a richer taste. Maybe experiment with a dash of white wine vinegar..or if that is still contraband then try a white balsamic vinegar. Hope this helps.

could i use 200ml of veg stock instead? as this is a t-total house? so dont even have it in or use it in cooking? x
