Egg mayo, spring onion and tomato open bagel

Peel and chop 2 hard-boiled eggs and place in a bowl. Quarter 7 cherry tomatoes and 2 spring onions and add to the bowl. Add 1 level tbsp of extra-light mayonnaise and some snipped cress and gently mix together. Season with black pepper. Cut 1 wholegrain bagel in half horizontally and lightly toast. Transfer to a plate, cut side up and top with the egg mixture. Follow with a 125g pot of Activia Greek Style Golden Honey Yogurt and 1 apple.
