  • 2 peaches
  • 14 strawberries
  • 4 tbsp single cream

Homemade mushroom and pepper pizza

Preheat the oven to 200C / Gas mark 6. Top 2 x 7-inch thin and crispy pizza bases with 150g of ready-made low-fat tomato sauce (look for one with less than 3g fat per 100g). Slice _ a red pepper and _ a green pepper, 1 small red onion and 10 mushrooms. Arrange over the pizza bases, sprinkle with mixed herbs and season with black pepper. Slice a 125g ball of reduced-fat mozzarella cheese and arrange the slices over the pizzas. Place on a baking sheet and cook for around 15-20 minutes until the veg is cooked, the cheese melted and the pizzas are piping hot. Serve each pizza with salad. Follow with peaches, strawberries and cream: chop 2 peaches and 14 strawberries into bite sized pieces. Divide between 2 bowls, each topped with 2 tbsp of single cream and serve.
