  • 1 green pepper
  • 12 cherry tomatoes
  • 1tbsp olive oil
  • 2 lean sandwich steaks
  • 6tbsp low-fat soft cheese
  • Horseradish sauce
  • Lemon juice
  • 4 wraps
  • 2 oranges

Beef wrap with roasted pepper

Hot beef and roasted pepper and tomato wraps with horseradish cream

Pre-heat the oven to 200°C/gas mark 6. Cut 1 red and 1 green pepper into chunky strips and place on a baking sheet with 12 cherry tomatoes. Drizzle with 1 tbsp of olive oil and roast for around 15 minutes until the peppers and tomatoes are soft and brown. Griddle or grill 2 lean sandwich steaks, according to how you like it cooked, then cut into strips. Mix 6 tbsp of low-fat soft cheese with horseradish sauce and lemon juice to taste. Warm 4 wraps and spread with the cream cheese mix. Then top with the steak strips and roasted peppers and cherry tomatoes. Wrap up and serve. Finish with 1 orange per person.

This really is a super-tasty meal - and makes you feel totally full and satisfied as well. You get a bit of everything with this meal - essential vegetables and tomatoes - protein and carbs. It's completely brilliant. And a great meal to make for a group of mates too! A great take on a Mexican classic! Ole!
