Chop ⅓ small ball reduced-fat mozzarella cheese and ½ small avocado into bite-sized pieces. Halve 7 cherry tomatoes. Mix the mozzarella, avocado and tomatoes with 275g leftover cooked pasta. Blend 2tsp green pesto with a little lemon juice and black pepper then pour over the salad. Toss to mix and serve with rocket. Plus a handful of grapes.

Hi Kirsty - sorry for the delay in replying to your question. I sometimes take the avocado out as well and I replace it with olives, sundried tomatoes, artichokes or fresh basil - they all taste as good and it obvioulsy the higher fat in the avocado. Let us know what you think! This is one of my favourite recipes.
