Jacket potato with homemade guacamole

Preheat the oven to 200C / Gas mark 6 and bake 1 large potato for around 1 hour until the inside is soft. While cooking, make the guacamole: peel and remove the stone from 1 small avocado and peel and finely dice 2 tomatoes. Mash the avocado and mix with the diced tomatoes, a squeeze of lemon juice, 1 crushed garlic clove, black pepper and a little hot chilli sauce to taste. Serve the jacket potato with the guacamole and salad. Follow with 1 nectarine.
