Jacket potato with spicy tuna

Pre-heat the oven to 200°C/gas mark 6. Bake 1 large jacket potato for around 1 hour until soft on the inside. Meanwhile, chop half a red pepper. Mix the peppers with half a small can of tuna (make sure you buy the tuna in water and drain it first) 3 tbsp of canned kidney beans (again in water, but make sure you drain them first) and 3 tbsp of hot salsa. Serve the potato with the tuna mix and some mixed leaves. Finish it off with an apple for dessert.

tastes mmmm but a it pricey on calories so i left out kidney beads

Thanks for the inspiration Mary and Maureen :) Although this is yummy as a jacket potato filling I look forward to trying it out in a pitta or a wrap instead!

I love jacket potato but can't stand tuna so substitute the tuna for salmon.
