Ingredients

  • ¼ cucumber
  • 2 ripe tomatoes
  • 1 small red onion
  • 1 green pepper
  • 8 black olives
  • 50g feta cheese
  • 1tbsp olive oil
  • white wine vinegar
  • black pepper
  • 2 lean lamb leg steaks
  • 4 thick slices of wholegrain bread per person.

Lamb chop with greek salad

To make the salad: chop ¼ of a cucumber, 2 ripe tomatoes, 1 small red onion and 1 green pepper into chunky pieces and place in a bowl. Add 8 black olives, 50g of crumbled feta cheese, 1 tbsp of olive oil and white wine vinegar, and season with black pepper. Toss all these ingredients together. Grill 2 lean lamb leg steaks until cooked to your liking. Divide the salad between 2 plates and serve with the lamb steaks and 2 thick slices of wholegrain bread per person.

This flavour combination is really delicious however the calorie conscious among you might shy away from this recipe. At over 600 cals it's higher than other recipes but it's easy to cut at least 150-200 cals of that by not having the bread! So you can cut the cals without compromising on the flavour of the meal! *Susannah
