To make the salad: chop ¼ of a cucumber, 2 ripe tomatoes, 1 small red onion and 1 green pepper into chunky pieces and place in a bowl. Add 8 black olives, 50g of crumbled feta cheese, 1 tbsp of olive oil and white wine vinegar, and season with black pepper. Toss all these ingredients together. Grill 2 lean lamb leg steaks until cooked to your liking. Divide the salad between 2 plates and serve with the lamb steaks and 2 thick slices of wholegrain bread per person.

At over 600 cals it's higher than other recipes but it's easy to cut at least 150-200 cals of that by not having the bread! Being veggie I replaced the meat with salad leaves - too much bread for one person
