Blend 400g of lean minced lamb to a smooth paste and grate 1 onion. Mix the lamb and onion with 1 tbsp of chopped fresh oregano and _ tsp each of ground cumin and coriander. Season with black pepper and divide into 8. Mould all 8 pieces of meat around 8 skewers, forming each into a flat sausage shape. Leave to chill for at least 30 minutes then barbecue or grill until cooked through. Serve 2 skewers per person with 1 wholemeal pitta, 2 tbsp of tzatziki and salad.
