Mackerel paté and toast

Homemade mackerel pat

Drain 1 tin of mackerel fillets in oil and mix with 100ml fat-free fromage frais, 2 tsp each of horseradish sauce and lemon juice, 2tbsp chopped parsley and a grinding of fresh black pepper. Toast 2 thick slices of wholegrain bread and serve with the patè and a side salad of mixed leaves, 1 tomato and some cucumber. Treat yourself to a 125g pot Activia Intensely Creamy Luscious Cherry Yogurt for dessert.
