  • 1 red onion
  • 1 courgette
  • 1 small aubergine
  • 1 red pepper
  • 1 green pepper
  • 2tbsp olive oil
  • black pepper
  • fresh basil
  • 1 small ball of mozzarella cheese
  • 1 wholegrain baguette
  • 4 bowls of fruit salad
  • 4 x 125g pot Activia Fat Free Vanilla Yogurt

Mediterranean veg

Mediterranean veg with melting mozzarella and Activia Fat Free Vanilla Yogurt for dessert

Preheat the oven to 200°C/gas mark 6. Cut 1 red onion, 1 courgette, 1 small aubergine, 1 red and 1 green pepper into bite-sized pieces. Place in a roasting tin and drizzle 2 tbsp of olive oil, black pepper and fresh basil over the top. Roast for around 20-30 minutes until the veg are soft and browned. Slice 1 small ball of mozzarella cheese and place over the veg. Return to the oven for around 5 minutes until the cheese melts. Cut 1 wholegrain baguette into 4 chunks. Divide the vegetables between 4 plates and serve each with a quarter of the baguette. Follow with 1 bowl of fruit salad topped with a 125g pot of Activia Fat Free Vanilla Yogurt per person.
