Chop ½ small avocado, ½ red pepper, ½ small red onion and 1 ripe tomato and mix together with ½ small can drained kidney beans (canned in water), 4tbsp grated reduced-fat cheese, 2 large handfuls of torn coriander and the juice of ½ lime. Serve with 1 wholemeal pitta bread. Plus a handful of grapes and 1 small banana.

I've just been looking for a little lunch inspiration as I've been getting a bit bored with sandwiches and salads recently. I think I've just found it, loving the sound of the avocado, red onion and kidney bean combination. Add that to the red pepper, tomato and fruit and this is also a long way towards your 5 a day.

There's been a lot of talk about unhealthy lunches at work but I think this recipes combats that. Most offices these days have a fridge and this salad is so easy to make. No excuses for a waistline busting sandwiches anymore! *Susannah
