  • 400g prepared couscous
  • 2 tbsp pine nuts
  • Fresh coriander
  • Fresh parsley
  • Black pepper
  • 1 lemon
  • 2 tbsp olive oil
  • 2 nectarines

Mixed bean cous cous salad with pine nuts

Drain and rinse a large can of mixed beans in water and grate 1 large carrot. Place the beans and grated carrot into a bowl and add 400g of prepared couscous, 2 tbsp of pine nuts, and a good handful of chopped fresh coriander and parsley to taste. Mix together, season with black pepper and squeeze over the juice of 1 lemon and 2 tbsp of olive oil. Toss well and serve immediately. Follow each plate of salad with 1 nectarine per person.
