Ingredients

  • 1tbsp sunflower oil
  • 1 small red onion
  • handful of mushrooms
  • ½ red pepper
  • ½ green pepper
  • 1 small courgette
  • 6 cooked new potatoes
  • 4 eggs
  • salad
  • 2 slices wholegrain bread
  • 2 bowls fruit salad

Mixed vegetable tortilla

Heat 1 tbsp of sunflower oil in a non-stick frying pan. Chop 1 small red onion, a handful of mushrooms, half a red and green pepper and 1 small courgette. Add all these ingredients to the pan and cook for 5 minutes, until they begin to soften. Slice 6 cooked new potatoes, add to the pan and cook for a further few minutes, being careful not to break up the slices. Beat 4 eggs and pour into the pan as well. Cook until the tortilla is almost set, then place under a hot grill until the egg on top is also set. Serve with salad and 1 slice of wholegrain bread per person. Finish with 1 bowl of fruit salad per person.

Tortillas definitely feel more filling for me than omelettes due to the potatoes. A great hearty dish for the winter nights!
