Make up 75g of raw couscous according to the instructions on the packet. Mix it with half a small can of drained chick peas, half a chopped green pepper, 1 tbsp of raisins, 2 chopped dried apricots, a handful of fresh coriander, lemon juice and 1 tbsp of olive oil.
