Lightly steam a couple of handfuls of spinach and poach 2 eggs according to how you like them cooked. Cut 1 wholemeal English muffin in half and lightly toast. Warm up 3tbsp of ready-made cheese sauce. Place the muffin halves on a plate, top with the spinach and eggs, and then pour over the cheese sauce. Season with black pepper and serve. Plus a fruit salad made from 1 small banana, ½ ripe mango and a handful of grapes

Poached egg and spinach is one of my favourite combinations - I can't wait to try this tomorrow. Think I'm going to skip the cheese sauce though and have an after lunch yogurt instead!
