  • 1 thick slice of granary bread
  • 1tsp low-fat spread

Mushroom omelette

Mushroom omelette

Heat 2 tsp of sunflower oil in a non-stick frying pan. Add half a chopped onion and cook for around 5 minutes until softened. Add 100g of sliced mushrooms and cook for 2-3 minutes. Meanwhile, beat 2 eggs with 1 tbsp of skimmed milk and add to the pan. Cook until the egg is almost set, then place under a pre-heated grill to set the top. Serve with 1 thick slice of granary bread topped with 1 tsp of low-fat spread and salad. Treat yourself to 1 of bowl fruit salad for dessert.
