Chop 225g cooked new potatoes in their skins and a 5cm piece of cucumber into bite sized pieces. Halve 7 cherry tomatoes and flake ½ small can of pink salmon. In a small bowl mix 3tbsp reduced-fat crème fraiche with horseradish sauce and lemon juice to taste and season with black pepper. Mix all the ingredients together and serve with a handful of rocket. Plus 1 apple and 1 small banana.

I've never been one to make potato salad because I find them boring. This is such a great recipe as for me it has re-invented the potato salad and has been a regular lunch of mine all summer. *Kat
