  • 5cm piece of cucumber
  • 7 cherry tomatoes
  • ½ small can pink salmon
  • 3tbsp reduced-fat crème fraiche
  • horseradish sauce
  • lemon juice
  • black pepper
  • Rocket
  • 1 apple
  • 1 small banana

New potato, salmon and horseradish salad

Chop 225g cooked new potatoes in their skins and a 5cm piece of cucumber into bite sized pieces. Halve 7 cherry tomatoes and flake ½ small can of pink salmon. In a small bowl mix 3tbsp reduced-fat crème fraiche with horseradish sauce and lemon juice to taste and season with black pepper. Mix all the ingredients together and serve with a handful of rocket. Plus 1 apple and 1 small banana.
