  • 6 cherry tomatoes
  • ½ ripe mango
  • 1 tsp miso
  • Small piece of fresh ginger
  • 1 tsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • Bowl of raspberries
  • 125g pot Activia Apricot Yogurt

Oriental prawn and noodle salad with Activia Apricot Yogurt

Cook 1 layer of noodles according to the pack instructions. When cooked, rinse under cold water and drain. Mix with a 100g pack of cooked prawns, 6 halved cherry tomatoes and _ a ripe mango, cut into chunks. Place 1 tsp of miso, 1 tsp of finely chopped fresh ginger and 1 tsp of brown sugar in a jar or container with a lid add1 tbsp of rice vinegar, 1 tbsp of sesame oil and 1 tbsp of water and mix. Shake well then pour over the salad. Toss to combine the ingredients and serve immediately. Follow with a bowl of raspberries topped with a 125g pot Activia Apricot Yogurt.

I LOVE seafood so this is right up my street. Try adding chopped sugar snap peas and baby corn, and top with crispy seaweed for a little more variety.
