Roast beef & salad sandwich

Triple decker roast beef and salad sandwich

Spread 3 slices wholegrain bread with 3tsp low-fat spread. Top 1 slice of the bread with 1 slice of lean roast beef and lettuce. Add another slice of bread and top with another slice of lean roast beef and 1 sliced tomato. Finish by topping off with the remaining slice of bread. Serve with a bowl of fruit salad made from 1 apple, a handful of grapes and 1 kiwi fruit.

It seems to me that you obviously do not seem to cater for the the elderly or for one person, how on earth could you each three slices of bread - not me¬!

This was amazing! However I did change a few things about! I had rocket instead of lettuce and I had 1tsp low fat spread 1tsp low fat mayo and 1tsp mustard, and deary me it was delicious!!!

Sorry, I was about to write that....I don't know what it is about left over meat from a roast dinner, but it just tastes so great cold the next day in a sandwich! Roll on Christmas turkey sandwiches! :)
