Pre-heat the oven to 200°C/gas mark 6. Cut 1 courgette, 1 red and green pepper, 1 small aubergine and 20 cherry tomatoes into bite-sized pieces. Place in a roasting tin, drizzle over 2 tbsp of olive oil and roast for around 20 minutes ,until the veg are soft and brown. While the veg are roasting, prepare 400g couscous according to the packet instructions. Mix the couscous with the roasted vegetables, 100g crumbled goats cheese, fresh coriander and black pepper. Divide between four plates and serve, followed by 1 apple per person.

with this dish i had mediteranean couscous and it didnt go very well, also used soft cheese instead of goats cheese - give it 6 out of 10
