  • 400g leftover cooked brown rice
  • 170g tub tzatziki
  • Small packet of rocket

Salmon and rice salad with tzatziki

Drain a 210g can of skinless and boneless pink salmon. Halve 12 cherry tomatoes, slice 6 spring onions and cut a 10cm piece of cucumber into chunks. Mix the salmon, tomatoes, spring onions and cucumber with 400g of cooked brown rice and a 170g tub of tzatziki. Mix well to combine. Divide onto two plates, and serve with a small packet of rocket. Follow the salad with 1 peach per person.
