Chop 2 tomatoes in half, remove the seeds and dice. Beat 2 eggs with 1 tbsp of semi-skimmed milk and stir in the diced tomatoes. Scramble the egg mix until the egg is set. Lovely, had scrambled eggs yesterday but had no tomatoes. Only had strawberry Activia!

enjoyed the scrambled egg but chose the toast option as suggested by Jennifer, i am not keen on muffins.

I wouldn't normally have time to make this during the week, but it was perfect for a Sunday. I'm not keen on muffins though so substituted with toast.

I enjoyed everything else apart from the muffin, next time i,ll leave it out.
