Scrambled eggs & muffin

Scrambled eggs and tomato muffin with Activia Fat Free Forest Fruit yogurt.

Chop 2 tomatoes in half, remove the seeds and dice. Beat 2 eggs with 1 tbsp of semi-skimmed milk and stir in the diced tomatoes. Scramble the egg mix until the egg is set. Toast 1 wholemeal English muffin and top it with the scrambled eggs and tomatoes. Serve it with a 125g pot of Activia Fat Free Forest Fruit Yogurt.

I do like scrambled eggs; decided to spice this up a bit by swapping the yoghurt for a spoon of 'low low cheese spread with cracked black pepper' yum!

Love muffins! have to step away from the butter though as just love muffins dripping with butter! just having the scrambled eggs on it was lovely and with the yoghurt I didn't miss the butter at all...
