Spicy cheese and tomato panini with guacamole

Fill 1 Panini with 4 tbsp of grated reduced-fat Cheddar and 3 tbsp of salsa. Grill until the cheese melts then serve with salad and 4tbsp guacamole. Try it with a pudding of 1 small banana and 1 kiwi fruit.

The pitta with this is lovely, I find the best way to cook these is to scrunch up a bit of greaseproof paper and run it under the tap, then open it out over the pitta and pop it in the oven which keeps it nice and moist. But, I'm not sure about the mozarella as I think this cheese has a high fat content, so I'd be more inclined to stick to a reduced fat cheese. The salsa and guacamole make this delicious, like a mini fajita!

Swapping the panini for pitta is a great idea Libby. I also prefer mozarella cheese. I great addition are a few basil leaves. Delicious! Eva
