Peel, chop and boil 450g of potatoes, drain, then mash with 2 tsp of low-fat spread and a little semi-skimmed milk and set aside. Cut 2 tomatoes in half, wash 2 large flat mushrooms and slice 1 small red onion into rings. Heat 1 tbsp of vegetable oil in a non-stick frying pan or griddle and fry 2 x 100g extra lean rump steaks for 4 minutes on each side for medium, more or less if you like them well cooked or rare. Remove from the pan, cover and keep warm. Add the tomatoes, mushrooms and onions to the pan and cook for around 5 minutes until cooked through, then remove and set aside. Meanwhile, mix 4 tbsp of reduced-fat crème fraîche with 1 tbsp of horseradish sauce, add to the pan and simmer for a couple of minutes to heat through. Serve the steaks topped with the sauce on top of the mash with the vegetables on the side. Follow with a 125g pot of Activia Greek Style Golden Honey Yogurt for each person.
