Chop 1 onion, 2 celery sticks, 1 small leek, 2 carrots and 1 large sweet potato into chunks. Place in a large pan. Add 1 large can of chopped tomatoes, 1 large can of drained butter beans in water, 2 tbsp of tomato purée, mixed herbs, 1 bay leaf and enough homemade vegetable stock to cover. Season, bring to the boil and simmer for around 45 minutes until all the veg are cooked and the gravy thickened. Remove the bay leaf and divide between 4 bowls. Serve it with 2 thick slices of wholegrain bread per person. Follow it with a 120g pot of Activia Intensely Creamy Juicy Raspberry Yogurt per person.

This is a great soup, so full of lovely vegetables. You could substitute other seasonal vegetables for the sweet potato. It's now October and butternut squash or pumpkin are in season and would make a nice variation. *Louise
