Cook 200g of rice noodles according to the instructions on the packet, drain and set aside. Then heat 1 tbsp of sunflower oil in a wok or frying pan, add 225g of tofu and fry for a few minutes. Add a 300g pack of stir fry vegetables to the pan and stir fry for a few minutes. Then pour in 75g of black bean sauce, heat though and serve with the noodles.
