Tomato, mozzarella & avocado sandwich

Triple-stacked tomato, mozzarella and avocado sandwich

Mash 1 small avocado and mix with a little lemon juice and black pepper. Spread 1 slice of wholegrain bread with the mashed avocado and top with 30g of reduced-fat mozzarella cheese, sliced. Top with another slice of wholegrain bread. Spread over the remaining avocado and top with 1 sliced tomato and a final slice of wholegrain bread. Follow with 20 cherries and 1 kiwi fruit.
