  • 6tbsp ready-made tomato sauce
  • 1 small can tuna in oil
  • 1 ball reduced-fat mozzarella cheese
  • 10 black olives
  • Fresh basil
  • Black pepper
  • Handful of rocket
  • 2 bowls fruit salad

Tuna, olive and rocket pizza

Pre-heat the oven to 200°C/gas mark 6. Place 1 thin and crispy ready-made pizza base on a baking sheet and top with 6 tbsp of ready-made tomato sauce. Drain 1 small can tuna in oil, flake and sprinkle over the pizza base. Tear 1 ball reduced-fat mozzarella cheese into pieces and add to the pizza, together with 10 black olives. Add some fresh basil sprigs and season with black pepper. Bake for around 10 minutes until the cheese melts. Top with a handful of rocket, cut into slices and serve. Follow with 1 bowl fruit salad per person.

I am making this tomorrow, but also making the base myself as I have the time. If you have a little more time it's really worth buying some wholemeal or spelt flour for example, to make this an even healthier option!
