Turkey, mango and rice salad with Activia Fig Yogurt for dessert

Boil 75g brown rice according to the pack instructions, drain and set aside. While the rice is boiling, grill a 130g turkey steak, then chop into bite-sized pieces. Slice ? mango and 3 spring onions. Mix all the ingredients together and toss with 2 tbsp of fat-free dressing. Serve it with a 125g pot of Activia Fig Yogurt.

This will be a great recipe for Boxing day and a great way of using up any left over turkey. It's nice and light which is just what we need the day after Christmas dinner. Just add warmed cooked turkey to the dish instead of grilling a turkey steak.
