Turkey, pea & cream spaghetti

Turkey, pea and creamy spaghetti

Cook 150g of wholewheat spaghetti according to the instructions on the packet, drain and set aside. Meanwhile, peel and dice 1 onion and crush 1 garlic clove. Then heat 1 tsp of olive oil in a non-stick frying pan, add the onion and garlic and fry for a few minutes. Add 150g of frozen peas with a splash of water and simmer. Dice 150g of cooked turkey and add to the frying pan when the water evaporates. Stir in 6 tbsp of reduced-fat crème fraiche and some freshly ground black pepper. Heat through, then mix in the cooked wholewheat spaghetti, toss and divide between 2 plates, each topped with 1 tbsp of grated Parmesan cheese. Serve it with a salad and it finish with an apple each.

The perfect New Years Eve meal - on budget and super-tasty! You can adjust the quantities to feed as many people as you want! I love serving this with a crisp, green salad (and a bit of garlic ciabatta if I'm feeling naughty!)
