Cook 150g brown rice according to the pack instructions, then drain. While the rice is cooking, slice 1 carrot, 1 green pepper and 6 spring onions. Heat 1 tbsp of sunflower oil in a large non-stick frying pan or wok. Fry the veg and cook for a few minutes. Then add 2 handfuls each of shredded Chinese cabbage and beansprouts. Heat through for a few more minutes. Then add 30g of unsalted cashew nuts and a 120g sachet of black bean sauce. Heat through and serve with the brown rice.
