  • 3tsp light mayo
  • 3tbsp grated reduced-fat cheese
  • ½ small sliced red onion
  • 25g roasted red peppers in water
  • 1tbsp toasted pine nuts
  • handful of rocket
  • 1 bowl fruit salad

Veggie club sandwich

Lightly toast 3 slices of wholegrain bread. Spread each slice with 1 tsp of light mayo. Fill the sandwich with 3 tbsp of grated reduced-fat cheese, half a small sliced red onion, 25g of roasted red peppers in water (make sure you drain them first!), 1 tbsp of toasted pine nuts and a handful of rocket leaves, layering the ingredients evenly between the two layers. Treat yourself to 1 bowl of fruit salad for dessert.
