Heat 1 tbsp of sunflower oil in a non-stick frying pan. Cut 1 red and 1 green pepper, 1 red onion, 1 courgette and 2 handfuls of mushrooms into chunky slices. Add to the frying pan and sprinkle with fajita seasoning. Fry for around 10 minutes until all the veg are soft. Warm 8 tortillas, grate 100g of reduced–fat cheese and shred ½ an iceberg lettuce. Serve the tortillas and vegetables with a 200g pot of fresh salsa, a 200g pot of guacamole, lettuce and the grated cheese – and let everyone tuck in!
