Pre-heat the oven to 200°C/gas mark 6. Top a 150g pizza base with 150g of ready-made tomato sauce. Chop 1 small red onion, half a red pepper and a handful of mushrooms and scatter over the pizza base. Add 5 tbsp of sweetcorn. Then grate 100g of mozzarella cheese and sprinkle over. All you need then is a pinch of mixed herbs. Place the whole thing on baking sheet and bake for around 10-12 minutes, until the veg are cooked and the cheese is melted. Cut into 6 and serve 3 slices per person with salad. Treat yourself to 1 bowl of fruit salad per person for dessert.
