Boil 4 halved new potatoes in their skins until tender, then drain and keep warm. Grill 2 lean rashers of back bacon until crispy. Boil 1 egg for around 7 minutes, peel and chop. Then slice 4 spring onions. Mix all the ingredients together with 2tbsp reduced-fat sour cream and chive dip and serve on a bed of mixed leaves.
