1. Summer Mixed Berry & Banana Smoothie Ingredients
½ a ripe banana, sliced
1 pot Danone Activia® Strawberry variety
1 tablespoon blueberries
1 teaspoon clear honey
¼ pint semi skimmed or skimmed milk.
Blend all ingredients together and serve in tall glass. Ideal for breakfast with some wholemeal or granary toast or seeded bagels.
2. Tzaziki Ingredients
400g natural yogurt (e.g. Danone Activia®)
1 medium cucumber grated and drained in a sieve to remove all excess water. (pat dry using kitchen towel).
1 clove of garlic crushed
1 tablespoon olive oil (optional)
1 tablespoon fresh dill chopped
salt and black pepper.
Combine all the ingredients together until well blended. Chill in fridge prior to serving, Garnish with dill and serve with wholemeal pitta bread, fresh crudities, for dipping.
3. Fresh Fruit Fool Ingredients
400g fresh fruit in season e.g strawberries, rhubarb, pears, apples, blackberries.
25g granulated sweetener
2 tablespoons water
400g natural yogurt (e.g. Danone Activia®) mixed with 1 tablespoon clear honey. (can use fruit flavoured, if so ,try to choose a flavour which will compliment the fresh fruit you are using e.g. Danone Activia
® Peach with fresh raspberries for a peach melba flavour).
1. Place fresh fruit in season in a heavy bottomed saucepan and add the water and granulated sweetener. Place over low to moderate heat until the fruit softens and the granulated sweetener has dissolved. Set aside to cool.
2. Layer the yogurt and stewed fruit alternatively in tall sundae glasses. Using the handle of a teaspoon make a figure of 8 movement in each glass to achieve a slightly marbled effect i.e.only slightly mixing the layers together. Serve chilled, decorated with fresh fruit or mint leaf.
Tip: You can use crushed meringue nests in this recipe. Simply alternate layers of stewed fruit, yogurt and crushed meringue for a tasty yet healthier lower fat desert.
