Recipe: The Vey Berry Pancake Title
The Very Berry Pancake

INGREDIENTS
50g wholemeal flour
50g porridge oats
1/2 tsp baking powder
2tbsp maple syrup
250g Activia Prune, Fig, Blackberry, & Raspberry & Rhubarb
5tbsp milk
1tbsp sunflower or coconut oil
200g frozen mixed berries
METHOD
1/ Place flour, oats, baking powder, 1tbsp maple syrup, 100g Activia and milk in a blender. Blend until smooth and set aside for 5 minutes to thicken slightly.
2/ Heat 1tsp of the oil in a large non-stick frying pan, pour in the pancake batter in 2tbsp dollops, spacing 3-4 cm apart - you should fit 3-4 in the pan at a time. Cook over a medium heat for 1 1/2 - 2 minutes until holes appear on the surface, turn over and cook for a further minute. Set aside cooked pancakes and keep warm, repeat with remaining oil and batter.
3/ Meanwhile, gently heat berries in a saucepan or microwave until thoroughly thawed and warmed through.
4/ To serve, pile up the pancakes on two plates, top each with half or the berries, remaining Activia and maple syrup.
🥜 Flavour boost: add ground cinnamon to the pancake batter, or a handful of finely chopped walnuts or almonds for extra texture.
